Recipe

“Mulatos” of Torres Vedras

ingredients:

* 500 grams of almond kernels with skin
* 4 eggs (whites)
* 500 grams of sugar
* 1 teaspoon (tsp) ground cinnamon
* Grated rind of half a lemon
* Butter for greasing
* Flour for dusting


 
Preparation:

Cut peeled almonds with the help of a sharp knife. Reserve.
Beat  the egg whites firm with an electric mixer, while you gradually mix the sugar. Continue to beat until a meringue. Join the cinnamon and lemon zest and then the finely chopped almonds.
Grease tray with some margarine and sprinkle it with flour . Shape small balls of dough. Put them in the trays, leaving some space between them. Bake at a temperature of 190 ° C for 20 minutes. Let cool and  remove the” mulatto”, with the help of a spatula.
